Cheddar Quiches with Vegetables and Chicken

Newlywed… few months ago that word didn’t mean anything to me, except perhaps a “what?” face or maybe discontent, however Cupid had the brilliant idea of knocking on my front door and let an unexpected guest enter my house… the result? Now I’m another one of the thousands who have discovered the wonderful meaning of that thrilling word.

My husband is one of those persons who really enjoy good cooking, of course for him being married to a professional chef is like winning the lottery and for me, cooking is a unique pleasure; my kitchen is my happy place, the one place I can be myself and feel absolutely relaxed surrounded by a comfort warmth and hundreds of different smells that evoke my deepest memories, definitely the best place in my house. So, cooking for my husband is a rewarding hobbie that ends with the sweetest thank you kiss and the expression… “mmm ¡this is yummy woman!”

Today I’ll give you a simple, cheap and quick recipe to impress your guests even if you’re not newlyweds.

Cheddar Quiches with Vegetables and Chicken

(Serves 4)

Quiches are made with lots of eggs, baked with a crust of Pate Brisée, which today I changed it for white bread, they are like a salty pie. The original quiche is made with bacon, ham and onions, but since I didn’t have any of those I decided to make my quiches with chicken and vegetables, but if you wish you can substitute any ingredient, you can use, turkey, sausages, or dehydrated flavored soy, the decision is yours, the important thing is that you enjoy your cooking and have fun, so let’s get started and… Bon appétit!

  • Ingredients:

4 slices of white bread

3 eggs

1 cup of milk

1 small chicken breast (like the one used to prepare fajitas)

½ cup of fresh, cooked vegetables cut in small cubes (I used peas, carrots and potatoes)

Cheddar cheese (to gratin)

Parsley, oregano, salt and pepper (for seasoning)

Cooking oil

  • Procedure:

Preheat oven to 200 °C

Cut the crusts of every bread slice, then toast them lightly and cut them on small cubes. Reserve them for later.

Cut the chicken breast on small cubes and fry those with the vegetables of your choice, season with salt, pepper, oregano and parsley (add as much as you want). Once the chicken is fully cooked remove from the fire and reserve.

On a bowl mix the eggs with the milk and season it.

Grease individual soufflé or muffin pans, then place the bread pieces on the bottom of the pans, add the chicken and vegetables up to ¾ of the pans, fill the pans with the eggs and milk mix but be careful on not filling them to much because the egg grows and then… you’ll have to clean your oven!

Bake in oven for 20-25 minutes or until a skewer inserted into the centres comes out clean. Once the quiches are cooked use the cheddar cheese to gratin them. Serve with fresh salad on the side.

Tip: Be extra careful when taking them out of the pans, they’re easily broken.
